Honey is a 100 % natural product based on the nectar, honey bees gather in the areas they fly. The homogeneity varies depending on weather conditions as well as flora and fauna in the parts of the world the honey is produced. This means that honey from one location can taste and look different from one year to another.

Compared to white sugar, honey contains fewer calories and has no fat or cholesterol, but it still is a concentrated tasty energy source for all kinds of cooking.

Honey has almost endless applications. In addition to the classic toast or in tea, it goes very well as part of a delicious topping on a yoghurt, in smoothies and all kinds of grilled meat. Also, in dressings, marinades, on fresh fruit and vegetables and that little exquisite dessert, honey is perfect for a round taste experience.

Honey and diabetes

The German magazine for beekeepers, ADIA, published in the January 2006 edition an article about diabetes and honey. The article claimed that also diabetics tolerate honey.

The GI of the honey determines its influence on the blood sugar. Heather honey has a GI of 55, which is considered to be low. Thus, heater honey is digested at a slower rate compared to pure sugar and may therefore be recommended to diabetics when they have a sweet tooth.

Jakobsens recommends diabetics to consult with their medical adviser.

Alternative methods to healing of wounds

Medical practitioners use to increasing degree alternative remedies such as honey. This is due to the fact that an increasingly number of bacteria is immune to antibiotics. Traditionally, antibiotics have been the only effective means against serious infections. However, if an antibiotics resistance has developed there is no alternative to surgery. “There is no doubt that honey has a positive effect on healing of wounds. Still, more studies has to be made before we know how extensively honey can be used”, the Chairman of the Danish Wound Healing Society, Professor DM, SMSci Finn Gottrup states.
